Hand-picked while still green in late October, the fruit is transported to the mill and cold-pressed  within 24 hours, safeguarding polyphenols, vitamin E and vibrant aromatics.

Lab analyses confirm a an excellence in quality extra virgin olive oil. Sensory panels rate it fruitiness 5.5, bitterness 5.0 and pungency 6.5, revealing notes of green tomato, freshly-cut grass, wild herbs and a gentle pepper finish.
